Sake Pairing Summer Kaiseki Menu @ FUMI 文

It’s been a while since I visited California Tower in Central. The list of restaurant seems to have changed a bit, for example – FUMI, was Ore-no Kappou as I remember. Yet it doesn’t change much in terms of the restaurant environment, still a very quiet and spacious area with counter seating.

6-Course Summer Kaiseki

We come over to try one of the latest summer kaiseki set menus. It is served per person along with a premium sake pairing package, inclusive of 5 seasonal sake selections from different prefectures.

Started with a strong-tasted sake, it comes with a fancy piece of sesame tofu as appetizer, with fresh creamy sea urchin, prawn and crunchy shield. The tofu has an abnormal dense texture but a very nice sesame aftertaste.

A smaller appetizer is simmered conger eel sushi, so rich in taste, succulent and tender on the inside, the rice beneath is as well flavoured perfectly.

Followed by a beautifully presented sashimi platter, including fatty toro, thinly sliced flat head fish, my favourite is the sardine to be eaten with minced ginger and chopped scallions.

Another sake comes next, specially imported from Osaka, Japan.

The soup dish is surprisingly tasty which has incredibly tender marumi pork and assorted julienned vegetables that are still crunchy in a light clear broth.

My favourite grilled dish is this sweet fish served with a homemade miso sauce, the fish is grilled with meaty on the inside and crunchy on the outside.

Last but not least, we have a Ochazuke with a piece of delicious sea bream and light green tea. It is made with a very special kind of short-grain rice that are much stickier compare to the usual one.

Finally, our kaiseki menu ends with a traditional Japanese dessert – Anmitsu. With dango (i.e. Japanese mochi), matcha jellies, adzuki bean paste and a scoop of creamy green tea ice cream; paired with a sweet-kind peach-flavoured sake.
